The Hummingbird Cake is a signature Southern dessert. Three layers of moist banana, pineapple & pecan cake with a fluffy cream cheese frosting. A delicious version of Southern Living’s 1978 classic and most requested recipe.
It can also be baked in a Bundt pan if you prefer. Grease and flour a 14 cup Bundt pan, bake at 350 degrees and extend cooking time to 60-70 minutes or until a long wooden toothpick inserted in the center comes out clean. Let cool in the pan for approx 15 minutes before inverting out of the pan and letting cool completely. You can add 1-2 Tblsp of milk to the cream cheese frosting to make it easier to spread on a Bundt cake.
