Fruit Pizza with a lemon crust! The lemon crust on this fruit pizza is really delicious and a welcome change from all the sugar cookie crust recipes. This is the perfect summertime dessert that won’t leave you disappointed! Easy to make, simple ingredients and keeps well in the fridge for a few days. This is one of my favorite go-to desserts all year.
You can also make individual fruit pizzas using the same recipe. Instead of using a round pizza pan use a jelly-roll pan. Spread out the crust dough thinner than you would on the pizza pan but not the full length of the jelly-roll pan. Be sure to watch the cooking time as it will take a few minutes less now that it’s thinner. After baking, let the crust cool for about 5 minutes then, using a round biscuit or cookie cutter cut the crust in circles but leave in place to cool completely. You can use smaller or larger round cutters depending on if you want them to be bite-sized finger foods or individual desserts. Top with the topping and decorate with fruit. Using a pastry decorating bag and a large star tip will make for an extra special & fancy presentation. Don’t throw away the scraps! They make a great snack on their own or you could even make a fruit pizza trifle with them!
